The Chef

Affectionately known as ‘Ollie’, our outstanding grill chef creates, at the very heart of the Blue Explorers Bar & Grill experience, a seasonal range of exciting dishes, involving often surprising combinations, from locally sourced produce, that consistently result in the delightful, intimate and memorable experiences which our diners rave about.

Chef Alfredo Agustin De Oliveira Ortiz was born in Asunción, Paraguay, from an early age immersed in the myriad smells and sizzling sounds of the bustling street markets of this famous South American city. Meat, and in particular Beef, forms an integral part of the Paraguayan passion for the art of food, passed on from generation to generation, with which Ollie blends more than a hint of Latin spice.  A perfect amalgamation of European, South American and Atlantic cuisines.

Blending the flame grilled flavours of his succulent, hand picked cuts of fillet mignon, his famous barbecue ribs and of course the outstanding local Canarian chorizo, with a fusion of fresh local produce, to devise new and delicious dishes that the whole family will enjoy.
